Valentine's Day Ideas for a Cozy Night In
Valentine’s Day is almost here! While I’m always up for an evening of good food and good company, I believe there’s no better way to really treat yourself and the one you love than a cozy night in.

I can’t believe it’s already February! Warmer weather couldn’t come sooner. We’ve been having slightly above average temperatures here in Philadelphia, giving me a little dose of Vitamin D that I need. This is one of my favorite times of year in Charleston, so I’m a little sad to be missing it. It has been nice to be home with my family for the holidays. There’s so much to look forward to…
ON MY CALENDAR
Off to New York with my mom and sister to say yes to the dress! My first mini trip of the year and I’m beyond excited. We have quite a few shops on our list and I have a feeling we’ll find the one. This is the fun part of wedding planning, haha. After dress shopping, I plan to have dinner at Via Carota, which has been on my list for ages! If you have any other New York restaurant recommendations, let me know. I’m hoping the weather stays mild so we can walk around the city comfortably. Other than New York, it’s been really nice to lay low this month. E and I like to keep Valentine’s Day pretty low key and I find there’s truly nothing more romantic that cooking dinner together at home. (Especially when wine and pasta are involved.)

We’re starting to plan our mini-moon and I’ve been immersed in warm-weather inspiration! Our wedding is in August, so it’ll be pretty warm across the country. If you’re not familiar with a mini-moon (I wasn’t until this year), it’s a shorter trip that requires a lot less planning and stress than a full blown honeymoon. As our wedding is truly a trip in itself, this gives us more time to plan an epic honeymoon for later in the year or next summer. Hello, Italy! For now, I’ll just curl up next to my space heater and pretend I’m on the Amalfi coast. Winter, we are done here.

Clean Eats: Chocolate Coconut "Truffles"
These decadent truffles are free of dairy, soy and gluten, but no less delicious.
CHOCOLATE COCONUT “TRUFFLES”
SERVINGS 12
INGREDIENTS:
12 pitted dates, softened
1/4 cup raw cacao powder
1/3 cup organic shredded coconut
1/4 cup finely chopped pistachios, cashews, or walnuts (optional)
Instructions:
In a powerful blender or food processor, add cacao powder, dates, nuts (if using) and 1/4 cup of coconut
Pulse about 40 times until mixture is combined
With slightly damp hands, form mixture into equally shaped balls
Roll in reserved coconut
Chill in fridge to firm, at least 6 hours
*Stores well up to 1 week in the fridge
